Add the ground coffee. The grind should be medium-fine, similar to that of caster sugar.
Pour in the hot water. Start with a 30-second ‘bloom’, which is a small pre-infusion to allow the coffee to release the gas and prepare for full extraction. Then continue adding water in concentric circles, without reaching the edge of the cone, until the desired amount is reached.
